Grease Trap
A grease trap is a plumbing device installed in the drain system of a commercial kitchen that captures fats, oils, and grease (FOG) from wastewater before it enters the sanitary sewer. The trap works by slowing wastewater flow through a chamber, allowing lighter grease to float to the top and heavier solids to sink to the bottom while the treated water exits through an outlet below the floating grease layer.
Grease traps in under-sink configurations typically hold 10–100 gallons and must be cleaned frequently — often weekly or monthly — because their small volume fills quickly. They are required by most municipalities for any food service establishment. Failure to maintain grease traps results in grease entering the sewer, causing blockages in building pipes and municipal infrastructure, and triggering regulatory violations.
