Grease Interceptor

A grease interceptor (sometimes called a large-capacity grease interceptor or LCGI) is a large underground tank — typically 500–2,000+ gallons — installed outside or beneath a commercial facility to handle the total grease-laden wastewater flow from a commercial kitchen. Unlike an under-sink grease trap, a grease interceptor is designed to handle the full effluent volume and can go longer between cleanings (typically monthly to quarterly) because of its large capacity.

Grease interceptors are required for medium-to-large commercial kitchens by most municipalities and food service regulations. They work on the same principle as a grease trap — slowing flow for gravity separation — but their size gives them significantly more capacity. They require periodic pumping to remove accumulated grease and solids, and the service must be documented for regulatory compliance.
